  • 4 cups chicken broth
  • 6 chopped green onions
  • 1 chopped red bell pepper
  • ¾ teaspoon salt
  • 4 oz shredded Monterey Jack pepper cheese
  • 1 minced garlic clove
  • 1 cup regular grits
  • 4 oz shredded sharp cheddar cheese
  • 1 lb peeled, cooked small shrimp
  • 10 oz can diced tomatoes with green chilies
  • 2 tablespoons butter
  • ¼ teaspoon black pepper


  1. Bring the chicken broth and ½ teaspoon of the salt to a boil in a pot, and then stir in the grits.
  2. Cover, reduce the heat, and simmer for 20 minutes.
  3. Stir the grits with ¾ of the cheddar and all the Monterey Jack cheese.
  4. Melt the butter in a skillet over a medium heat.
  5. Add the garlic, green onions and bell pepper, and sauté for 5 minutes or until tender.
  6. Stir together the green onion mixture, grits mixture, shrimp, drained can of tomatoes and chilies, and a pinch each of salt and black pepper.
