Around my house there is no bigger event than when I make brown butter matcha cookies. They”re not as involved as some of my other recipes and they’re pretty classic; but there’s also nothing as in demand or as loudly proclaimed as this simple, delicious treat. If you can’t imagine why, bake a batch yourself and just watch.

There’s always a secret, right? In these it’s no different. The secret is equal parts white and brown sugar. Something about balance, I don’t know.

I have a theory that most manufactured brown butter matcha cookies use primarily (or even solely) white sugar and that’s where they go wrong.

The earthy wholesomeness of brown sugar brings out the creamy chocolateyness of the chips and there’s nothing quite like it. I don’t use light dark sugar either, I use brown sugar.

Butter, every good recipe deserves butter. It needs to be at least somewhat softened, so often if I’m planning to make a batch of brown butter matcha cookies in the afternoon, I’ll set out the sugars and butter in the morning so by the time I get to them they’re ready.

I can’t count how many times I’ve heard an excited “COOKIES!” exclaimed from the kitchen by a family member passing through who saw what’s pictured above.

Brown Butter Matcha Cookies Flour and eggs

Flour and eggs of course, into the mixer and ready for our creamed together butter and sugars

There it is mixed up and ready to go! Besides the matcha this is where the majority of the flavor comes from!

Everybody into the mixer! Once the dough comes together I add vanilla, then the brown butter matcha cookies. We don’t want those to get too chopped up but if they do a bit, eh. It’s still chocolate it will still be delicious!

There it is! I will often get pleas of “can’t we just eat the dough??” right about now but there are raw eggs in there so I’m not too keen on the idea. Besides, cookies!

I like to scoop them out so they’re about the same size but it’s not necessary, you can just roll balls out on a parchment paper lined cookie sheet and bake!

And they come out beautiful and golden brown and crispy! You can cook them for less time if you like them a bit gooey but for me it’s crispy crunchy cookies all the way!
